We had a very simple lunch today of cod wrapped with parma ham. Very simple, only took 15 minutes to cook and was absolutely delicious.

We also like pork chops cooked in the oven on a bed of apple, onion and mushrooms with breadcrumbs and cheese sprinkled on top.

For homemade pasta sauce- 2 tins of chopped tomatoes (value or supermarket own brand fine) then fill up tins with water and pour that into bit pan too. Start it boiling. Chop up finely (or grate in food processor) an onion, 2 carrots, 1 sweet potato, handful of mushrooms, couple of courgette/peppers whatever veg you have in the house and leave to simmer for an hour. If you don't have a lot of fresh veg frozen is good here too-like chopped spinach, peas, cauliflour etc. Add crushed garlic and italian herbs and simmer some more, blend and freeze in jam jars or plastic bags when cool.
