roasted vegetables to go with roast chicken.....

Carrotts, parsnips, potatoes either in roasting tin with chicken or in a seperate one.

I just put them in with the chicken depending how big your chicken is. I find the carrotts take longer than parsnips.

peppers, courgettes, aubergine, fennel, onions are a nice 'Mediterranean' type of mix

Cut peppers into quarters, halve the courgettes longways, and then halve these pieces longways, cut the aubergines into chunks, cut the fennel bulb into quarters, cut the onion into wedges.

Mix them in a baking tray, sprinkle generously with olive oil, season with salt and pepper and roast for 30-40 minutes till soft/charred

Roast potatoes - I like to parboil them first. So, peel and chop, into pan of cold water. Bring to the boil and cook for 5 to 10 mins once boiling. Drain, return to pan, put lid back on and give them a shake to roughen up the surface. Then into preheated roasting tin and coat with oil. Coook in oven for about 45 minute.

I usually do carrots and parsnips too, but don't parboil those, just chop and put in tin with oil and roast for 30 to 40 mins.
