right do i cover it with foil ? i am following the oven instructions as far as heat and time is concerned ,oh and its topside
I wouldn't cover it with foil, as you will end up steaming rather than roasting the meat. Only reason to put foil on top is if it starts to burn before it's properly cooked through.
Seal it first, put the pan on the hob heat up the oil and just brown the outsides, will keep the juices in and make the meat moister.
bugger ,already put it in the oven ,could put the baking tin on the hob though ,so shall do that now ,only been in 10 mins . Many thanks for your helpful advice ,really hope i dont balls it up as it cost me £10
