DS2 used to love sandwiches but has gone off them. Desperately need inspiration for quick and easy lunches...
At the moment the only other things I know to do for him are cheese on toast, baked pot with cheese and beans or tuna mayo, scrambled egg, avocado and cream cheese wraps.

My DD is 15 month old. I don't give her sandwiches for lunch as she often has toast for breakfast (amongst other things) I'm not sure about quick lunches, but this is what my daughter eats...

Vegetable fried rice (no added salt or soya sauce). You can make the rice the night before and keep it in the fridge. I stir fry it with peas, chopped carrots, courgette and egg.

Risotto with peas, onion and butternut squash.

She also has cauliflower cheese which I make in a large batch and freeze. You can take out the night before and heat up for lunch.

Boiled red lentils with vegetables. It's almost like soup when cooked and I eat it as well with toast and add salt and pepper.

Salmon fishcakes. I actually made them for DH and I the night before, but made extra and cooked one the next day for her.

I find that DD is more interested in what I eat now and seems to love my food so I'm actually trying to cook dishes that we can both eat thus saving me from preparing two meals.

Tinned sardines and salad are a staple in this house

omelette is quick and good, esp with cheese, onion, tomato and spinach.
Cheese on toast

How about saving small portions of what you have, eg:

Pasta and veg in tomato sauce.
Curry (easy on the chilli) and rice/potato
Fish pie (fishy mash with veg)

I usually put some of what we have for dinner in the freezer and use that - so pasta usually. He also likes eggs.
Today we had pitta bread and hoummous with veg sticks and cheese. But i don't have that very often as it doesn't seme that he eats very much.

We sometimes have pizza too.
