Help, have halloumi stockpile...

Any suggestions? I seem to have accidentally bought several halloumis as storecupboard staple but don't really know what to do with them. I only know an ancient Delia Smith recipe with coriander and garlic which is nice but not that nice.

Grilled hallomi sandwich is devine but not very healthy. Saw a recipe the other day that was grilled veg and couscous with grilled halloumi on the top.

I had it once with a green salad, it was thickly sliced and quickly fried (Not healthy but delish).

It can be a bit rubbery if overcooked.

roast in cubes with sweet potato. Think it's a nigella recipie.

Grilled, with a quick squeeze of lemon - lovely

Breakfast food when I'm feeling decidedly unhealthy; bacon, fried egg and grilled halloumi.

My favourite ever pasta:

grilled halloumi cubes
coriander pesto (v important: not basil pesto)
baby broad beans

If you want a bit of oomph, chuck in some chopped Peppardew sweet chili peppers also.

Do a spinachy pasta with fried halloumi cubes sprinkled on top

halloumi and vegetable kebabs (marinate halloumi in oil, lemon, garlic, mint and spring onion, then put on skewers with cherry toms, cubes of bread and ribbons of courgette folded up)

fry in cubes and have in pitta breads with salad or grilled veg

it is food of the (very bad) Greek gods, being entirely mostly fat and salt.

Another Nigella recipe is finely chop a red chilli and mix it with olive oil. Grill the cheese in slices then drizzle the chilli/oil over the top and then squeeze some lemon juice over - it is VERY simple and VERY VERY nice!!!

find a prawn curry reciepe and add lightly grilled halloumi

Hey great ideas here, thanks, I like the Nigella bake (we have a few of her cookbooks kicking around, but they belong to DH and he doesn't like getting his books mucky so I don't use them...)grin

I also like the idea of kebabs and the chilli/olive oil one.

I had halloumi chilli and orange salad last night.

Fry some garlic and chilli, cut an orange into skinned segments and put on dressed leaves/tomatoes/red onion then fry halloumi in chilli oil and pour the lot onto salad and have with large glass of white wine.

Also nice stuffed into a pitta if you're really hungry, and you can replace the orange with pomegranate seeds.
