apricot crumble

Got a large quantity of Apricots which Sainsbury was selling off which I have stewed. I would like to make apricot crumble for pudding tomorrow. To give it extra flavour I thought about adding ground ginger but should I add this to the apricots or into the crumble topping? Or would apricots and ginger not go well together at all?

i reckon add ginger to stewed fruit but also sprinkle a bit on top of the crumble (as you'd do with cinnamon for an apple crumble).
when i do apricot crumble also add a handful of ground almonds to the topping instead of flour...usually mix with a bit of peach as well as british apricots dont always taste of anything much....
(hankering for peach and apricot crumble now damnit )

Yum! I would also put flaked almonds and some oats in the crumble.

I think ginger should go in the apricot.

Oh here's another idea. Grate in the rind of an unwaxed lemon for extra scrumminess.

I do this in apple crumble and it's fab!
