I will be coating the potatoes in vegetable oil (have no olive oil) , adding sausages, then roasting the peppers and tomatoes all in the same tray. What else can I add, do I need a tin of toms, or garlic, It seems a bit, bland??Or is this just wierd? TIA
I did something like this on Monday and it was lovely without the tinned tomatoes.Just add the tomatoes 10 mins from the end, along with a slosh of Balsamic vinegar.I served it with a pile of green beans
No, won't be bland.Serve with mustard.
sorry "add the fresh tomatoes 10 mins from the end"
Yummy...just some salt and pepper!
Onions/red onions/shallots?Whole, unpeeled garlic cloves? When it's done, squeeze the garlic out of the skins, mush it up and mix it into the roasted veg. Gives a mild, sweet garlicky flavour.Sprigs of rosemary?Other veg - courgette, giant mushrooms, butternut squash, new potatoes (delicious roasted)
