Can any of you suggest something nice to cook that doesn't include vegetables...

...other than root vegetables?
My friend has colitis and can't tolerate anything fibrous, so can only eat root vegetables.
Just want some fresh ideas please for a main course with root veg and any meat or fish of your choosing...?

roast parsnips, squash and carrots, with any meat or fish or your choosing.

c'mon - haven't you got any ideas about what to do with them, like curried squash or pan fried lentils with carrot waffles...?!

knew it was tine to go to bed, but am too tired to trawl through my cook books and thought MN might be able to help....

cassoulet (sp?) made with swede, parsnips, carrots, sweet pots, or real pots, beans, sausage and take your pick out of confit duck (oops nearly posted dick), sausage, chicken, etc, really needs some toms but presume they won't do? garlic if he can stand it. loads of herbs. a drop of wine to make the sauce nice.

fish pie with sweet potato mash on top?

one thing I love is beetroots (get raw ones and boil then peel and slice them, not the vinegary salad ones) baked in white sauce - you could have that with meat or fish.

Or just do a lovely baked white fish with butter and white wine sauce and a big pan of roast root veg - sweet potato, parsnips, carrots, butternut squash - roast with lots of olive oil and herbs. I would also put whole shallots and garlic cloves in - even if he can't east them they will add flavour and other people can have them.

he is actually a she but I'm having more fun imagining cooking beetroot for a he!!

tiger - cassoulet stuffed full of sausage and real pots sounds more manly so I shall make that for my dh anyway I think!

muffle - I like the sound of your beetroot in white sauce. I love beetroot any which way!

Huw - I shouldn't have mentioned lentils as of course they are seriously a no-no for an anti fibre meal, but can you give me your recipe anyway please?

Yes my DP would do a big boak if I presented him with the beetroot number. I make it when he's away and it it all myself

I only saw your last post and wondered what on earth you meant by just saying "eat it" !!!!
my dh loves beetroot too so we have an abundant supply in this house - pickled, plain, sweet chilli something from tesco....

I should be in bed...this is fabulous.

Ditch the celery if she can't eat it.

Use lardons - more flavour.

Just thought - tomato puree - will that be a prob?

Make sure you add the cream (see note at end of recipe) little by little, until it tastes perfect.

Deceptively simple, absolutely stunning.

yes, I thought you'd gone to bed (I was going too but am sad and got embroiled in threads!)

that spag bol recipe looks yummy! Thanks - not sure about tom puree, can't think a bit will harm..would have to avoid the onion though.

I'm off to bed too - dh has already gone up and was tutting at me furiously tapping away at the keyboard - I don't blame him, I lose hours of time MNing at night!

MrsMH - your dish has won the vote! I shall be making the ultimate spag bol (minus the chicken livers and the onion...but am sure it will still be stunning as the recipe sounds marvellous, dahling!)
Thanks to all - and I'll have to have a beetroot dish somewhere in there for muffle -it's so nice to chat with another beet lover!

My DP makes a Peruvian dish with pureed pumpkin with cubed potatoes cooked in it and then you mix in chopped feta just before serving with rice...yum

Toad n roots in the hole. Basically toad in the hole, but bacon wrapped around the sausages and carrots, swede and onion.

Yes, 'tis good - the sharp salty taste of the feta offsets the comfortable blandness of the pumpkin and potato

Wow, I'm impressed! I actually cooked it today. Forgot to buy wine, though - at self. Makes a huge difference having wine in it. It's lovely and comforting, and dead easy to make. Also great if you have nice bread to soak up the juices. I also use lamb mince as we're not keen on beef.

Will your friend be okay with the celery? Or will you drop that as well? Perhaps you could replace it with something rooty that has a similar tang - chopped celeriac, perhaps?
