am going to do a beef casserole tomorrow with the celeraic, leeks, carrots, potatoes, sweet potatoes.
byt what can i make on monday with the fennal, tomatoes, courgettes? also have some onions i think. am thinking of a pasta sauce or something, but dont have a clue how to make anything. something i can freeze as well.
You could slice the fennel, onion and courgettes, fry them off, add a tin of chopped tomatoes (or peel and chop the ones you have), add some herbs, simmer for half an hour or so, then put it into a casserole dish, top with white sauce and grated cheese and put it in the oven for 20 minutes.
