You can make great meringues in microwave - but they are Sooo full of air they tend to explode on eating.
Simply mix as much icing sugar as you can into egg white. Roo into a long sausage and cut 2p piece sized slices. Put on greaseproof paper & "Ding". Can't remember exactly how long they take - less than a minute so suggest practice & watch through window.
We used to make into faces by sticking smarties onto them with wet icing mix. - Great fun.
Peanut Butter Cookies.
225g soft brown sugar
100g peanut butter
1 egg, beaten
175g plain flour
quarter of 5 mil tsp bakjing powder
quarter of 5 ml teasp salt
1 tsp vanilla essence
Cream butter, add sugar, beat well until soft. Beat in peanut butter and the egg.
Sift the flour, baking powder and salt.Mix into creamed mixture and add vanilla essence.
Form into small balls (2 teasps each), flatten with fork dipped in sugar.
Place 6 at a time on microwave baking tray and cook for 1& 3/4 - 2 &1/2 minutes depending on size. Turn once halfway through. Power setting Full.
Leave to cool on wire tray. Repeat with remaining mixture.
Choc cup cakes.
75g SR flour
50g soft brown sugar
1 egg, beaten
120 mls milk
Place 6 paper cases into a 6-ring muffin microwave muffin pan.
Sift flour, cocoa and salt into bowl, Rub in butter or marg, stir in sugar.
Mix in the egg and milk to make soft, almost runny, mixture.
Half fill paper cases and cook for 2 mins, turning the dish after 1 minute.
Remove onto cooling tray and cook remainder in batches of 6.
Ice as required.
3 x 15 ml tablespoons golden syrup
100 g demarara sugar
100 g marg or butter
225 rolled oats
1 teasp baking powder
1/2 teasp salt
1 egg beaten
Line 8" round dish with clingfilm
Place syrup, sugar and butter into bowl and heat for 2 - 21/2 mins. Stir till well blended and sugar dissolved.
Stir in remaining ingredients and place in prepared dish.
Cook 4 - 5 mins turning every 1 1/4 mins.
Leave for a few minutes to set then mark into wedges.
When cool remove from dish and cut into wedges.
