Duck Confit questions

I have just made it for the first time - is it right that the legs have shrunk?? Does it mean that I can now eat two??

Is it really unhealthy? Can I give it to my 7 month old and my 2 year old?

Can I just pour the fat back in to the original jars and put it back in to the fridge for another time or will it go off? How long can I keep it for?

Yes the legs shrink.
Yes you have my permission to eat 2 LOL!
I don't think it is too unhealthy as long as you drain off most of fat before cooking and the rest before eating.
Why waste it on unappreciative baby and toddler - eat it all yourself grin
I use the left over fat for cooking roast pots, keep it in tupperware in fridge and it seems to last a good long time - obviously disgard if mouldy or wiffy.

I love confit de canard - can I come round? I'll bring yummy French country wine grin

What is your method for getting the salt off hmm - I may not have managed sufficiently...

My DC love it (tinned from France, not home-made blush)

Fat lasts for ages in the fridge - we re-use it again and again (largely for roast tatties)
