Vegetarian evening meal ideas please!

I'm a vegetarian but I'm the only one in the house. My children are bored with everything I cook (I hate cooking and don't have a very extensive repertoire it has to be said). Anyone got any ideas that even non-vegetarians will love?

Have you looked at some of the recipes in the veggie section in the recipe bit of MN? There's some really good ones.

We are all veggie and my dc know nothing else so it's a bit different. Our main staples are:

Lentil spag bolognaise
soup and nice bread (leek and potato, lentil, tomato, sweet potato and lentil)
veggie sausage casserole
veggie sausage in yorkshire pud/toad in the hole
Baked potatoes with cheese/beans/hummous and salad
Veggie crumble
Quiche and home made oven chips
Pizza and salad
Chick pea and mixed veg korma, poppadoms and rice
Ratatouille and rice
Veggie shepherds pie (with lentils or beans)
Pasta and roasted veg sauce
Macaroni cheese often with added veg

Wow, those are impressive lists, thank you. I've since looked at the recipe section on here too. Now I don't know where to start! I'm especially interested in the chick pea curries (love chick peas) so if you could give me details I'd be grateful. I'll go and see if I can find similar in the recipe section.

Wombling’s Chickpea and potato curry

I do a chick pea and potato curry, which you can cook with or without tomatoes:

oil in large pan, 1 tsp cumin seeds until the pop, add a large chopped onion or two, frey until softened, add potatoes, peeled and diced into 2cm cubes, stir fry for a few minutes, add some water, about a glassfull. stir, add tinned chickpeas, or soaked and cooked dried ones, 1/2 tsp tumeric, 1 tsp chilli, 1-2 tsp salt, stir well, simmer until almost soft, then add 1 heaped tsp each of ground cumin and coriander seeds.

For a lovely sour spicy taste, add more water and simmer until the potatoes are almost cook, add a couple of tablespoons of tamarind paste, and at the end of cooking add 1 - 2 tsp of garam masala.

For a tomato sauce, add 1 tin of chopped plum tomatoes, or 2-3 chopped fresh ones, simmer until cooked and finish with garam masala.

Serve either version garnished with chopped fresh coriander with rice or indian breads or on it's own. It's lush with crisps crushed over the top, and lemon juice squeezed over the top - Yum!

Chickpea and Spinach curry

6 - 8

1 12oz can tomatoes
Veg oil
2 tsp mustard seeds
1 onion, diced
4 cloves garlic
2 tbsp ginger fresh, minced
3 tsp curry powder
2 tsp cumin
1 tsp corianger
pinch cloves
½ tsp cinnamon
3 cardamom pods
1 tsp salt
10 cups spinach
4 cups chickpeas* (2 cans)

Toast mustard seeds in oild until popping for about 1 in, add onion, sauté for 7 – 10 mins until onion begons to brown
Add garlic and ginger, sauté 2 mins
Add spices, salt & ¼ c juice from tinned tomatoes, sauté 1 more min
Add tomatoes (not juice) & heat
Add spinch b the handful. ,ixing til each one is wilted
add chickpeas
Cover, simmer for 10 mins, stirring occasionally
Cook uncovered for 10 more mins til thick

* I cook a big batch of chickpeas and freeze them - 2 cups = 1 tin.

Chickpea Curry


1 tin of chickpeas (drained and rinsed)
1 tbsp oil or knob of butter
1 onion (chopped)
1 clove garlic (crushed)
2 inch piece root ginger (grated)
¼ tsp red chilli powder
½ tsp cumin powder
¼ tsp coriander powder
¼ tsp turmeric
¼ tsp salt
1 fresh tomato (chopped or 1 small tin of tomatoes)
a pinch of garam masala


1. Heat a deep saucepan or a medium sized wok and add the oil or butter followed by the onions and garlic.
2. Fry the mixture till the onions are caramelised. Then add the salt, cumin, coriander, turmeric and red chilli powders. Mix for a minute and tip in the tomatoes. Cook the sauce until it begins to thicken.
3. Add ¼ cup of water and stir. Then tip in the chickpeas and mix. Mash a few of the chickpeas while cooking. Cover and simmer for 5 minutes. Then add the ginger and the garam masala. Cook for another minute.
4. Serve with pitta breads or plain basmati rice.
