put it on the rack in the oven with a tray underneath rather than in the tray IYSIM- that way the fat drips off

Prick the skin all over with a fork (allows fat to darin out), sprinkle skin with salt, place on rack (grill rack will do) & roast. Get some plum sauce! or Sweet chilli dipping sauce.

Yes-the nigella twice cooked duck is fab-never goes wrong. You have to boil it-but can do that tonight, then whack it in a really hot oven when ready to eat. its in the cooking in advance bit of how to eat.
A lovely and easy sauce is the delia one-morella cherry jam (about 1/2 jar) boiled with some red wine-about a glass (check delia though!).
