Cous cous - what can I do with it?

Dh and I are having pork loins for tea - usually have it with baked potato and steamed veg but not got potatoes in. Would cous cous go with it OK and how could I make it more interesting - is there anything I could add to it?

packets always say 'steam' couscous: eh? i've no idea how you'd do that -- it would just tumble though the holes on my steamer. so i pour boiling water to cover it, leave for 30 mins or so till soft, then add a bit of freshly squeezed lemon juice, olive oil, salt, pepper, mix together, yum. at this point I throw in anything lying around: chopped spring onion, chunks of feta or grilled halloumi, fresh herbs, fresh chopped tomatoes, olives, cuke.

also nice with chunks of grilled or roast veg: courgette, aubergine, red pepper, and a bit of melted goats cheese. ooh and heaps of toasted pinenuts.

big fan of rocket pesto, made in blender (bag of rocket, garlic clove, olive oil, pinenuts), stirred in too.

feel a bit gutted to have missed the earlier thread

I use couscous with pork, cook it in stock, add chopped up spring onions. If i'm doing a fruity sauce for the pork, then add oj, dried apricot bits and sultanas too.
