Ok - here we go.

3 large ripe bananas
175g marg
175g sugar
225g flour
pinch salt
1/2 tsp ground cinnamon (optional)
2tsps baking powder
1 large egg
125g coarsely chopped walnuts
100g sultanas or raisins (optional)

Heat oven to 180c/gas 4/350f

Peel and mash bananas in large bowl, then beat in marg.Shake in sugar, add sieved flour, salt, cinnamon and baking powder. Mix well with wooden spoon.
Now crack egg and blend in before adding the walnuts and sultanas/raisins.
Grease a 2lb/1kg loaf tin and spoon in mixture.
Bake for about 1 1/2 hours and test for readiness with skewer into the middle. Will come out clean if done.
Turn out onto wire rack and leave to cool completely before serving.
Enjoy with a cuppa!

I'll leave bestest buddy aero to find it as we are on our way out! Will check later to see if she found it. If you put some dark brown sugar into a pot with some butter and melt them down, then add a little cream you get the most delicious caramel sauce to cover your bananas and icecream with.
