I do a salade niçoise with rice, I dunno why as I am sure it's meant to have lettuce (and/or potatoes?) but it's the way my mum has always done it.
Basically rice, boiled egg, tuna, black olives, raw onion all mixed together. Salt and pepper to taste, I generally put some olive oil on when serving. 'Proper' niçoise also has anchovies in but I loathe these so miss them out.
