Cooked from scratch economy dinners...

in the spirit of Jamie and his healthy school dinners, I made Chicken , tomato and fresh basil in the oven, was yummy! Anyone else got quick yummy on the cheap recipes that are healthy, they want to share???

Just made Jamie Oliver's "Very Veggie" sauce recipe. Loads of veg and it makes six pints so extremely economical. Children LOVED it too!

mediterranean roast vegetables (red pepper, tomatoes, carrots, maybe some squash and courgette bunged in oven with olive oil) with baked spuds and a leg of chicken.

can I plug Enids Homemade Chicken Nuggets?

Also - blitz onion, garlic and celery in a food processor, then fry quite slowly until it is really soft (THE KEY TO ALL YUMMY TASTING FOOD - DON'T RUSH IT). Add a tin of plum toms (don't buy chopped, they are more expensive and not as tasty) and simmer for 20/30 mins. Add a tin of yellowfin tuna (tiny tin, not expensive), mix with just-cooked pasta, pour into a casserole, grated cheese and breadcrumbs on top - done, yummy.

Very Veggie

I butternut squash (peeled and grated)
3 courgettes (grated)
3 carrots (grated)
2 red peppers (chopped)
3 small onions (chopped)
6 cans of chopped tomatoes
2 bay leaves
large pinch oregano

Put enough olive oil in a LARGE pan to cover the bottom. Put in all the veg and fry gently for 5 to 10 mins. Add the herbs and tomatoes and simmer for 30 mins. Season. Use hand-held blender to whizz it up.

I used the food processor for the grating and chopping. It looks like a mountain of veg and you need a large pan but it does cook down quite a bit. Blitz it in batches or your kitchen will resemble a scene from a horror movie!!

Can use as a sauce or pizza topping and it is fab. Five pints in freezer to see us through Easter.

dont buy chopped toms, they are the floor sweepings, plum cheaper and tastier

I made them again today - with thighs not breasts and they were even more yummy. I didn't put quite so much cheese in.

i used thighs to make them too this week, enid, & was very impressed. ds hardly got a look in. i added extra garlic too.

I think the garlic makes them actually. And it just replaces all the vile fake spices in the packaged versions
