Last night I made a souffle using a recipe from a book and whilst it was very edible, I realized that I have no idea what a souffle is meant to be like; we never made that kind of food at home and I have never eaten a souffle anywhere. What should the texture be like? It was like very fluffy scrambled eggs. Should it really be hollow inside?

No definitely not hollow. Should be soft, light and creamy inside, a bit like a very light omelette. Mmmmmmm.

Hollow inside doesn't sound quite right, it shouold be very fluffy, almost melt in your mouth fluffy.

Thank you! At least I am getting one thing right in life! I think I thought that it was supposed to be hollow inside from some subliminal memory of 1970s sitcoms where the woman botches up and the souffle collapses as she brings it to the table, which only seemed possible if it had been hollow.

I saw Delia make one on tv and it was hollow inside
