Veg Pakora - is there any way to make crispy pakora without deep frying?

Just saw Hugh Fearnley's chef making veg pakora, brings me back 20 years to a beach shack in Goa. Rum and coke and a huge plate of crispy veg pakora for sundown. Fantastic.

How can i make a less fattening version?

you can shallow fry, would that suit?

but deep fried is best (thats why they taste goodare very unhealthy!)

Found this the other night, and made them last night. Just with onions but would work with any veg. BAKE IN THE OVEN ONION BHAJIS!!! They needed longer in the oven than the recipe. But they were delicious!!

shallow frying wouldn't actually make them any less fattening than deep frying, provided the fat for deep frying is hot enough it should seal the food before any oil is actually absorbed into it, and then you drain on kitchen paper anyway.

Baked would be ok but they wouldn't taste nearly as nice. It's the fat that makes them taste so good grin
