It's like toffee/fudge only it's not chewy and has a grainy texture - involves a lot of sugar, condensed milk and butter.

Have pg related heartburn and really should go to bed as shattered but for some reason Tablet seems like a good idea - not that I intend to cook any tonight but tomorrow is another day

Tablet - not my recipe but hopefully it will work!

1/2 cup water
1/2 cup milk
4 oz butter
2lb granulated sugar
1 tin condensed milk (large)
large Swiss roll tin (buttered

Put water and milk into a thick-bottomed pan. Add butter and melt slowly, add sugar and melt very slowly - stirring occasionally. When sugar is thoroughly dissolved bring to boil for 5 minutes. Add condensed milk and boil for another 12 minutes (approximately). When ready a small quantity will form a soft ball in cold water. Remove from heat and beat for 5 minutes or until tablet starts to thicken. Pour into the tin. Cut into bars when cool.

Twiga, here's the recipe I use:

150ml milk (full fat)
175g unsalted butter
800g caster sugar
225g condensed milk

Milk and butter in pan and heat to dissolve. Add sugar and stir to dissolve. When dissolved and beginning to simmer, add condensed milk. Stirring all the time to prevent burning, simmer for about 10 minutes until it changes colour. Do the cold water test - put a wee drop in a cup of cold water to see if it retains its shape. Remove from heat and beat vigorously until your arm falls off (about 5 minutes). Pour into tins which you can chill in advance (not strictly necessary) and line with tin foil.

This recipe does work but it is a bit tricky. I made 3 batches before I got it to work properly and burnt my hand really badly as well!

Thank you! Am going to go and get ingredients later and give it a shot - two recepies means twice the excuse now! See if the cold water test doesn't quite come off, do you just heat for a bit longer?

Yes you do Twiga. I think it's a hard thing to give a recipe for as it's very much trial and error but once you've had a few goes at it, you'll get to know what you're doing.
