Runny Fudge. Will it ever harden?

Noooooooooo. Sorry. I found out the hard way at the school fete. People did eat it with a spoon though and said it was lovely. I told them it was an old Scottish recipe.

you can hot it up again though and then it will harden.

I had this problem last year, so is it not beating it for long enough or not boiling the sugar correctly? And how do you know when you've done both the right way? Can it be corrected by re-boiling?

I'm determined not to be defeated by fudge!

Just stick it back in the pan and boil it again - works for fudge and jam btw.

yaffle you have to boil it until a drop balls nicely in a cup of very cold water.

My DH prefers it really crumbly (extra few mins and more beating) and the DC prefer it slightly softer - I don't pay much attention to boiling times etc, so however it comes out I just pretend it was meant to be!

Ta. Can't remember how I tested it last year, probably temp alone which is a bit unreliable when it comes to jam so probably the same for fudge too.

Or you could just mix it into the ice cream near the end and have vanilla udge swirl ice cream instead... [who me, lazy? emoticon]

I made runny fudge once. I just froze it and ate it frozen. It was TOTALLY delicious that way!! Honestly!
