Hi janx - I ended up with a pumpkin last week from DS2' school (they had grown them).

I scooped the insides out, added a couple of carrots and a few potatoes, stock, tiny bit of curry powder, simmered and then blitzed. It was the most tastiest soup and went down very well with some crusty rolls.

Peel and cube pumpkin.
Peel and cube one sweet potato.
Fry off.
Add vegetable stock - about 500 ml.
Simmer for 25 mins.
Blend. Add milk to consistency required.

You can add cumin / curry powder if your DCs like it slightly spicy.
