This is from a book called 'The Curry Secret' which claims to give the secrets to Indian restaurant food which you can make at home! Haven't tried this one but some of the curries have been nice so you might want to give it a go:

Serves 4

3 large chicken breasts
4 tbsp plain yoghurt
1/2 tsp red chilli powder
1/2 tsp salt
2 tsp vegetable oil
pinch of yellow food colouring (optional)

Cut each chicken breast into 6 chunks. Mix remaining ingredients in a bowl and add chicken. Mix well to coat the chicken then marinade for min 4-6 hours or for max of 3 days.
To cook, preheat oven to max temperature and bake for 10 mins. Serve with green salad, lemon wedges and raita. Let me know if its nice

I marinate chicken in:

olive oil
garlic
lemon juice
fresh thyme
black pepper.

really tasty, really easy, really quick and cheap. Oh and healthy!

Or if you want a tasty tagine type thing try: paprika, honey, cinnamon, harissa (or chilli) and lemon juice. Marinate for several hours and brown off in pan, then add tinned toms, chicken stock cube in water, white wine if you fancy it, and chick peas and chopped dried apricots. Serve with rice/taglietelle or cous cous.
