New soup recipes thread with recipes... I'll start (had some FANTASTIC suggestions on other thread.

Carrot and Orange soup

15g butter
1 large onion
2 cloves of garlic
225g peeled diced potatoes
450g peeled diced carrots
300ml semi skimmed milk
450ml chicken stock or veg stock
grated rind and juice of 1 orange
black pepper

soften onion and garlic then pop everything else in.

Blend when cooked.

You may need to thin it down a bit with some more milk or water.

YUM!

Courgette soup

2 large courgettes
1 medium to large onion
Large knob of butter
Good glug of olive oil
½ litre of vegetable stock
Handful of basil (optional)
Salt and pepper

Fry the onions and courgettes in the oil and butter for a few minutes. Add salt and pepper and continue sweating until the courgettes and onion are softened.

Add the stock. Bring to the boil, then cover and simmer for 20 minutes. (10 minutes is OK if in a rush).

Using a hand blender, blend the soup along with the basil (optional) and serve.

Spicy chick-pea and bacon (or cauliflower) soup

2 tsp oil
1 chopped onion
2 crushed garlic cloves
1 tsp garam masala
1 tsp ground coriander
1 tsp cumin
1 tsp turmeric
½ tsp hot chilli powder
2 tbsp plain wholemeal flour
600ml vegetable stock
400g can chopped tomatoes
400g can chick-peas, rinsed
6 rashers lean smoked back bacon
salt and ground black pepper
coriander sprigs to garnish

Heat the oil in a large saucepan. Add the onion and garlic and cook for 5 minutes, stirring occasionally. Add spices and flour and cook for 1 minute, stirring. Gradually add the stock, stirring constantly, then add the tomatoes and chick-peas. Bring to the boil, stirring, then cover and simmer for 25min. Meanwhile, grill the bacon for 2-3 minutes on each side, dice, then stir into the soup. Season to taste, reheat gently until piping hot and ladle into soup bowls. Garnish with coriander sprigs.

For a beggie option, it works well with cauliflower instead of bacon.

Butternut squash, Sweet potato and red onion soup- not for the uber health conscious (my own improvised recipe- feel free to bastardize).

Serves 6-8 large portions

Carrots (4 ish), diced
Red Onions (4-6 to taste), quartered
Sweet Potatoes (4-6 depends on size), chunks
Butternut squash (large-ish), chunks
Vege stock 2lts (ashamed to admit I use 2 stock cubes and lots of water)
salt
pepper
thyme- 2tsps (1 to garnish- lemon thyme is nicer)
cream (to garnish)
butter (1oz)
olive oil (1 glug)

heat oil and butter in large pan. Add all veg and brown. Add stock and all spices/ herb. Simmer for 30 mins. Blend with hand blender- if consistancy is very runny, simmer for a further 20 mins.

To serve- drizzle with cream and thyme.

This freezes really well and I used to make it into icecubes for my LOs too.

Spicy butternut squash soup

1 onion
1 butternut squash
1 can coconut milk
1 tsp cumin
some red chilli flakes/powder
small amount of water
seasoning

Fry onion.
Add cumin.
Add cubed squash.
Add coconut milk and some water (sorry just guess to get a good consistency but is prob around 1/2 cup depending on size of squash)
Cook.
Whizz up.
Take some out for kids.
Add chilli flakes and cook for a couple of mins.
