can anyone tell me how to make vegetable soup.....

what kind of vegetable soup? a chunky one with everything in it or a puree type one?

Fry up a selection of veg with garlic and onion, simmer in tomato puree, then add 1 pint of veg stock - bring to the boil and simmer until all veg cooked - then whizz down to the right consistency.

yes a chunky one..i buy big soup atm..but i'm getting through so much of it..(and it isn't cheap)..would like to try and make my own...

big soup... that brings back memories of living in a bedsit with my first boyfriend. His mum bought us a bag of groceries once which consisted entirely of tins of Big Soup. We ate nothing but for weeks. Can't touch it anymore

Anyway, to go back to the recipe thing. The basis for most soups is to fry some onion in some oil. For your chunky soup just add chunks of whatever you fancy: I would probably do carrot, potato, leek, turnip as a starter. Then you can add garlic if you like and some chicken or vegetable stock. If you want a minestrone type then do half tomatoes, half stock and towards the end of cooking time add some broken up spaghetti and I like shredded greens as well.

Just put in what ever you fancy really and cook till soft. Some veg takes less than others so experiment a bit. Squash is really nice in soups, you can also add tinned beans or bits of bacon.

Season it with salt and pepper towards the end, if it needs it.

This is how I make vegetable soup.

2 onions
2 leeks
3-4 celery sticks
1 medium swede
2 parsnips
4 carrots

All chopped into chunks, put in a large pan and add boiling water, once back up to the boil, add in 3-4 tablespoons of pearl barley and 3-4 of split red lentils. Let boil for 20-30 minutes, top up water if needed.
Whizz with stick blender for a few seconds so the soup is not watery but still lots of chunks in it. Sometimes serve with parmesan or grated cheese on top.

I make a big pot and then freeze in smaller portions.

dead easy to make chunky leek and potato soup

chop up leeks, peel some potatos and cut into chunks, rinse potatos well so not starchy..

sautée the leeks in olive oil and butter until softening, then add potatos, cover with a kettle full of boiling water crumble in a chicken or veg stock cube and simmer

et voila !

you can add cream and blend it down if you want it smooth
