Easy, foolproof cake recipe wanted!

what sort of cake?

here's my favourite easy fruit cake recipe - no weighing!

add one mug milk, one mug sultanas or mixed dried fruit and 50g butter (well, about a fifth of a pack) to a pan. Bring to boil. then let it cool down. Stir in 2 eggs, then stir in 1 mug self raising flour. Cook at about 180/gas 5 for about half an hour I think - check it with a skewer.

PS forgot the sugar! 1 mug sugar should go in the pan before you boil it.

also add a bit of mixed spice if you're feeling adventurous.

Sorry, it would have helped if I'd been specific (pregnancy brain strikes again!). Chocolate would be good, although I love fruit cake too!

basic easy sponge, always rises (from tesco cookbook years ago)
6oz caster sugar, 6oz butter. whisk together really well until white. 3 eggs, whisk really well after adding each one (to get air in).add 6oz sr flour carefully by stiring in with metal spoon. pop in 2 tins in over for 15 mins i think 190 degrees. just watch it until its golden and a bit firm. If you want it as choc cake, add couple spoon cocoa powder instead of flour.

EGGLESS CHOC CAKE (v.v.simple)

Grease & line 2 8" Sandwich tins

Whisk together in jug: 8fluid oz milk, 4 fl oz oil, 1 tsp vinegar, .5tsp vanilla essence.

Sieve together: 8oz plain flour, 8oz castor sugar, 2oz cocoa, .25 tsp Bicarb Soda, 1 level tsp Baking Powder, .25 tsp salt.

Stir liquid ingredients into dry. Beat well with wooden spoon to a smooth slack. Pour into tins. Bake at 190 Degrees C /Gas 5 for approx 25 mins. Fill with buttercream, top with choc icing.

Milliways, will that recipe work with soya milk (Infasoy even, but could use other, grown up style). Also, why vinegar? Have you made it)

Have never tried soy milk - don't see wht not! Don't know about the vinegar, it's my mums recipe & works well. The kids like making it as the vinegar & oil separate & make bubbles in the milk (hence you HAVE to whisk it before tipping onto dry ingredients). It is a v.moist cake, but take care not to take it out oven too early or it will sink.

Banana and choc chip cake - needs over-ripe bananas, saves chucking them

6oz marg
2tbs golden syrup
4oz sugar
10oz SR flour
½ tsp salt
½ tsp bicarb
2 eggs
3oz choc chips
10 oz mashed banana
½ tsp vanilla essence (not essential)
demerara sugar (not essential)

Melt marg, syrup, sugar in large saucepan.
Add flour, salt, bicarb.
Leave to cool, then add egg, choc chips, banana and vanilla.
Grease 8" cake tin and pour mixture in. (Can use other size/shape tin but cooking time would vary, but it's pretty much trial and error anyway!)
Sprinkle demerara on top.
Bake at 180 for approx 1 hour.

It always looks done before it is, so needs skewering regularly until you are sure.

It is lovely!
