I've got a ton of sweet potatoes. Want to make a stew/curry for freezer - any good recipes?

I'm going to make butternut squash and sweet potato soup, and also a red thai curry, but looking for new inspiration.

Anyone know any good (veggie) recipes please?

Have just used Gillian Mckeith's soup recipe - it's got raw garlic in it. I'm sure people were backing away from me in the shop earlier...

The soup and curry sound divine. To be honest, I really like sweet potatoes just cooked as a potato substitute - roasted, mashed, baked or made into chips (yum).
