really fancy making pasta bake tomorrow. Anybody got any great recipes? TIA!
Veggie version (very cheap standby!):
Heat tablespoon olive oil in wok or big pan. Add: 3 chopped onions (2 if large!); 3 chopped peppers (4 if small!); 100g mushrooms, sliced; anything else to hand, eg. carrots, baby corn or courgettes.
Saute until veg is cooked but still retains a bit of 'bite', then pour in jar of pasta sauce. Add tin chopped tomatoes. Optional, any of the following: handful frozen peas; 1/2 pack frozen Quorn mince; tin kidney beans.
Leave that to simmer whilst you cook 400g pasta shapes as on packet (if anything undercook SLIGHTLY), & make cheese sauce - melt knob of butter, stir in flour to make paste (over heat), stir in 3/4 pint milk (using whisk prevents lumps), bring slowly to simmer, when thickened throw in handful grated cheese.
Mix veg glop & pasta, tip into casserole or any oven proof receptacle. Top with cheese sauce & more grated cheese mixed with breadcrumbs.
Bake in oven for 30 mins (GM 6) or till browned & bubbling.
Serve with salad &/or garlic bread - should feed 4-6
I like Rose Elliots pasta terrine recipe in her Vegetarian Pasta book Page 130. Serves 6-8 but for us more like 3-4!!
225g rigatoni, butter for greasing, salt, 1 tbspoon olive oil, 1 onion chopped, 1 garlic clove crushed, 1 green pepper chopped, 400g toms, 50g breadcrumbs, 6tbsppons tom paste, 1 tbsppon fresh oregano, 2 eggs beaten, 125 parm cheese grated, pepper.
Cook pasta, line & grease 900g loaf tin put oven on 180c/350f gas4, cook onion in oil for 5 mins. Add garlic, green pepper & toms. Cook for 10-15 mins until tender. Add the pasta to this mixture along with breadcrumbs, tom paste, eggs 3/4 of the cheese, salt & pepper. Mix & pour into tin. Put rest of cheese on top & bake for about 45 mins until firm. Serve in slices hot or cold (lovely the next day!) with a salad, bread or some tomato sauce so it's not dry. Very tasty & easy to make I put extra parm cheese on the top & sometimes add extra veg in the mixture.
WE like tuna pasta bake - v quick and easy..
Put pasta on to boil, add generous handful of frozen peas per person. Meanwhile make white sauce (either with a roux or packet mix) - need about 1/4 pint of milk per adult).When sauce done add abiout 1/2 teaspoon of nutmeg. Flake tuna into sauce. Pour sauce onto pasta and mix well, put into ovenproof dish. Crush ready salted crisps, cover pasta mix. Top with grated cheese and grill until cheese is melted.
