Chutney help please!

When did you make it? Normally I would keep chutney for at least 3 months and ideally more like 6, they mellow and are much nicer, like you say when first made they have that kind of vinegary feel to them. If I have a batch that is a bit strong I usually just stick it at the back of the cupboard and try it again in a couple of months.

Agree with Takver - best to let it mature for a couple of months at least (assuming it's a recipe that can be left to mature) - this smooths out the vinegariness.
