Ladies, talk to me about butter icing - how long can it be kept out of the fridge?

DD1 needs to take cakes into school tomorrow for a cake sale on Friday. The cakes won't be refrigerated. I've already made cupcakes, but am debating whether the butter icing will be OK by Friday if I ice them tonight and put them in the fridge?

I know I would eat a cake that had been kept out of the fridge for a couple of days, but I have a gut of steel!

In an ideal world, I would say ice them tomorrow afternoon and hand them over when you collect her from school late tomorrow. If that's not possible then, providing they are going to be kept in a fairly cool place, I would probably chance it (but then I have a gut of steel too!). If you're worried, though, perhaps you could always do glace icing instead.

I never keep cakes in the fridge, even with butter icing, so I think they'd be fine.

I would keep butter out of the fridge for several days, unless it was hot weather such that it would melt into a puddle. Butter icing will keep for at least a week out of the fridge I would think. And I wouldn't put cupcakes in the fridge, they will go stale quicker.

I wouldn't refrigerate a cake either, unless it had a squidgy ganache or something (mmm ) I'll just risk it. I also keep my butter on the counter, and sugar is a preservative, isn't it? I'm sure the little darlings will be just fine!

it'll be fine. sponge cake with butter icing filling will last days n days with no ill-effects (if it doesn't get scoffed)

ooh and aren't you organised?..no panic-baking at 5am on friday for you! Well done babypowder!
