I've got a fridge full of fruit, what can I do with it all?!

After moaning about my aunt feeding ds so much rubbish food she has bombarded me with fruit! I've had a massive bag of apples from her friend's garden, then yesterday she gave me 2 big pots of rasberries/blackberries and rhubarb. It wasn't until about 3 hours later that I realised they were frozen packs and had fully defrosted so I couldn't put them in my freezer. If I turn them into a crumble can I re-freeze them? Any ideas what I can do with it all?

Hi again - yes if you make crumble you can re freeze them - i make little ones then it's easy to whip one out for DH when he wants something sweet.

You could also cook up a fruit compote to add to plain yogurt, porridge, etc. this too could be frozen - Icecube trays are handy size for popping one in porridge

Thanks (again!)!! Probably a stupid question but what do I need to do to make a fruit compote? Ds has porridge most mornings and would probably love something other than banana in it!!!

Just chop up the apple, put in about 4 tbsp water add berries/rhubarb add a little sugar/honey (rhubarb is a little tart!) and cook until all is soft and squishy - apple should disintigrate and thickenit.

I'd bing the fruit back in the freezer, it's not like it's raw meat or anything. As long as you don't want the berries raw (freezing them will change the texture) no harm will come of it.

As for the apples, well they will keep for yonks. Just eat them, as and when.

Fhubarb turn into crumble or compote.

DS and I get through that amount of fruit every three days or so

rhubarb compote: just cook up the rhubabrd (chunks) with sugar and a few tablespoons of water. Adjust water/sugar to taste. It will keep for at least a week in the fridge.

ooh I made compote last night for the first time, it was gorgeous and we ate the lot instead of freezing it

Boil up half a pint of water, chuck in about 4 tabs caster sugar (less if using very sweet fruit), 1/2 tsp vanilla essence and the zest of an orange. Chop fruit. When boiling throw in hardest fruit first (apples, rhubarb) gradually adding in the rest. Leave to bubble for 15mins or so, stir a lot if you want a big splat or leave to simmer if you want it to keep its shape.
