I'm finally down to the last 3 sweet pots out of the 2kg I ordered by mistake!! I thought I'd make soup out of them. Any ideas on what else I could put in? I don't have any carrots left. I've got frozen onion and some garlic and a few jars of dried herbs. I have a ton of fruit, apples especially. Could I put a few in or just keep them for a crumble?

Hi

If you peel and roast the sweet pots and butternut then fry off some onion in a little butter and olive oil. Add the roasted veg and cover with veg stock cook for about 20 mins then add a little grated nutmeg (not necessary though) and if feeling adventurous a little orange zest (about 1 tsp). Wizz in blender until smooth - if you add a knob of butter when wizzing it goes all creamy.

Lentil & a touch of corriander/curry powder is nice with this sort of veg.
