Flour - a question for US mumsnetters

What is the UK equivalent for all-purpose and cake flour?

just use regular white flour, won't make a difference ( ie not self raising stuff) for all purpose

have never heard of 'cake flour'

Oh dear. Just used SR flour AND baking powder. Better stand back from the cooker, giant Madeleines about to take over...

I have a list from Joyofbaking.com (not a bad site actually) - baking, cake, all purpose, SR, bread - 1 was getting a little confused.

plain flour is all purpose.

cake flour is not self raising. avoid the ones labelled 'strong white' or 'breadmaking flour' those are higher in gluten than other flours.

Makes perfect sense now you've explained it. Oh well, my recipes have always been a bit of experimentation!
