Following Psycho's how to eat soup thread, I want to make some. What shall I make?

You can´t beat a good leek and potato soup.

Cies Wed 17-Sep-08 18:46:59

Or minestrone, if you fancy some bits.

Leek and Potato or lentil. Have found that the simpler the soups the nicer they taste.

Roast pumpkin with cheddar cheese.

Slice one large pumpkin season and a little oil and roast at gas 6 for 45mins to 1hour.

1 chopped onion
1 litre homemade chicken/veg stock
a little milk.

Fry chopped onion in a little oil for 15mins
add peeled/chopped roasted pumpkin stir together for a few mins. Add stock and cook for 30mins.

Blend until smooth add a little more stock or milk to thin.

Serve with a handfull of cheddar cheese stired in and crusty bread.

You can add a little garlic, but i find it over powers the pumpkin.

Carrot and parsnip is scrummy. Recipe here

MrsMattie Wed 17-Sep-08 19:39:00

I make a really nice wintery root veg one with parsnip, carrot, sweet potato, potato, chicken stock and lots of fresh herbs. Yummy.

Chicken soup - the proper, clear broth (aka 'Jewish penicilliin') - my ultimate fave
