sorting out pantry and freezer in a bid to economise ... found one lonely tin of chickpeas...

what is a great recipe, something really tasty which will take seconds and cost pence??

mix tin of chickpeas with:

1 finely chopped red onion/spring onions
finely chopped cucumber
crushed clove garlic
salt and pepper
1/2 tspn cumin
1/2 tspn coriander
handful fresh chopped coriander
drizzle of lemon juice
drizle olive oil

Lovely lovely salad, perfect with crusty white bread

whiz it up with garlic and cottage chese and a chili

chickpeas mixed with a thick herby garlicy tomato sauce, served with rice

chickpeas mixed with cooked rice and melted butter, served with tobasco sauce and/or soy sauce and steamed finely shredded white cabbage
