Simple meals to freeze please

Assuming I clear enough room in my freezer in the next week or so, I want to cook and freeze some simple dishes for me for when I come home from hospital. I'm not bad at cooking, just short on recipes for some tasty meals that are ok just to re-heat in a saucepan/oven to go with fresh veg. Any ideas? TIA.

pea and ham, broccoli and blue cheese, parsnip ( can you tell I am revving up to my maternity leave and filling the freezer...?!?!). I bought an excellent cook book called "bowl food", not ÂŁÂŁÂŁ, that had loads of great ideas for soups, pastas (you can make the sauces in advance) and stews....

Best thing for a stew is to throw your meat say diced beef in to a casserole dish with some gravy, boil some diced carotts, sweed and potatoes. When they've boiled pour that water in to your casserole dish and throw in the veg and cook on a low heat for a few hours very tasty.

Cheers. I'll have a look next time i'm in whsmith. I've got a book on soups but even in my collection of cook books there's not really any recipes suitable for freezing

I like freezing my own ready made roast dinners.

I get 2 chickens and roast them at the same time and make up a big batch of mashed pots and a big load of stuffing.

I divide it up into those foil containers like the ones you get take away meals in and smother with home made gravy.

With the foil containers you can just pop them straight into the oven and with a little fresh veg you can have a nice comforting roast dinner!

Snap on the foil containers. Brilliant for most meals, straight from freezer to oven and ready in average of 30 mins - no hassle.

have loads of the foil containers cos I regularly cook batches of bolognese and chillie etc. Hadn't thought of roasts Soapbox, thanks. My fave meal actually and usually as there's only me, I cook enough for 2 days and reheat, just hadn't thought of freezing it. Head is full of impending birth etc etc which leaves no room for imagination

Sesame Chicken
not sure of quantities as it is a recipe I got from mum.

fresh Chicken breasts, or boneless thighs

olive oil
butter
lemon juice

breadcrumbs
mixed herbs
sesame seeds
salt and pepper

plain flour

melt butter in a pan, add olive oil and lemon juice

mix together breadcrumbs, sesame seeds, herbs and salt and pepper

dip chicken pieces into flour, then into pan of butter/oil/juice

coat in bread crumbs and place on cling film to wrap and freeze.

To cook - defrost fully then cook in oven at 180 degrees C for 15 - 20 mins

Just another thought - what about trays of roasted vegetables.

Nice served with couscous or with rice, or just as an accompaniment for roast dinners!

Soapbox - officially 8 and a bit weeks but I may be induced in 3 as i've got probs with my kidneys but have been assured that the baby should be fine.

Changing the subject, the thing you so kindly helped me with on xmas eve has worked out ok, just still trying to tie up the loose ends. Many thanks again.

Curries - mild ones if you think you will be breast-feeding. You can freeze them with the rice.

Hi Marthamoo & yorkigirl. Curries are a great idea but yes I am intending to BF so will keep that in mind. Meatballs too, I've got a lovelye recipe for lamb ones but they go with a creamy dill sauce and i'm not sure that will freeze. I guess I could make a tomato sauce for that.

Any more welcome

ready cooked yorkshire pudding - 4 minutes in the oven and get some tins of mince/stew in to go with it.

Shepherds pie
