Found this recipe online the other day and it is totally delicious so thought I would share:

Sausage, Red Onion and Apple Casserole

150 ml apple juice
450 g sausage
1 large onion(s), red, sliced
1 teaspoon sunflower oil
500 g New Potatoes, drained, or other brand
400 g canned tomatoes, chopped
2 medium cooking apple(s), peeled, cored and sliced thickly
1/4 teaspoon dried sage
1 pinch salt
1/4 teaspoon pepper

Cook the sausages under a moderately hot grill for 6-8 minutes, turning half-way through cooking.

Meanwhile, heat a non-stick saucepan. Mix the onion with the oil. Add to the pan and fry for 2-3 minutes, stirring continuously.

Stir in the chopped tomatoes, apples, sage and apple juice. Gently bring to the boil and then add the sausages and potatoes. Season with salt and pepper.

Reduce the heat and simmer, covered for 10-15 minutes.

Isn't it! grin

Glad you liked it too

is it bad that I think the things I like most is how easy it was to make, how quick it was to make and yet it LOOKED like there was a lot of effort went into it

got to LOVE receipes like that grin

MadreInglese Thu 04-Sep-08 12:10:30

minimum effort for maximum effect is always good

pgwithnumber3 Thu 04-Sep-08 12:12:08

Ohh going to make this tomorrow.

Legoleia Thu 04-Sep-08 12:12:24

Soounds good, thanks MI!

How about adding it to the recipes section on MN? (then I can save it without having to write it down wink)

TsarChasm Thu 04-Sep-08 12:13:14

Wow! I actually think I have all of those things in the house and was just wondering about dinner later. Thanks!!smile

biglips Thu 04-Sep-08 12:15:11

yum yum!!

i was gonna make a sausage casserole for tmrw but was gonna do it differently but this sounds lovely esp with the apples....hmm hmmmm

TheDevilWearsPrimark Thu 04-Sep-08 12:17:01

Oh wow that sounds lovely, I adore sausage casseroles!

Do you think it would work with lentils and butter beans rather than potatoes?

dizzydixies Thu 04-Sep-08 12:18:57

DWP - would work perfectly with butterbeans, we were discussing that last night as I had also made new potatoes like a muppet - also peas suggested!!

for those making it, I added a big tblsp of tomato puree too to make the sauce a bit thicker

and completely agree - chuck it onto the receipe section!

TheDevilWearsPrimark Thu 04-Sep-08 12:24:31

Lovely, I might make this tonight. I was going to order pizza, but no no no.

TsarChasm Thu 04-Sep-08 12:25:13

Just right for this weather.

LittleMyDancing Thu 04-Sep-08 12:26:34

does anyone know how long cooked sausages keep in the fridge? I have some from last Fri, will they still be ok?

TsarChasm Thu 04-Sep-08 12:30:30

I wouldn't LittleMyDancing, they sound a bit elderly at nearly a week old. I do tend to veer towards the overcautious when it comes to food though.

LittleMyDancing Thu 04-Sep-08 12:32:43

I probably won't eat them (10 weeks pg) but expect Cast-Iron-Stomach-DP will grin

TheDevilWearsPrimark Thu 04-Sep-08 12:33:23

No way, that's almost a week! I'd possibly reheat them the next day, but not after that.

biglips Thu 04-Sep-08 12:57:23

the longest i keep cooked sausages in the fridge is 2 days (even when im pg)

MadreInglese Thu 04-Sep-08 13:57:06

How do I add it to the recipes section then? Thought that's what I'd done already blush

dizzydixies Thu 04-Sep-08 14:00:04

I don't know sorry was going to ask you so I could put on my white chocolate cheesecake grin

TsarChasm Thu 04-Sep-08 18:57:21

Another big success here too. Thanks again Madre. My dd ate so much I thought she would pop grin
