I want it crumbly, slightly chewy with a bit of a crunch?Any ideas?TIA

Home made or bought? If bought, you need the assistance of this.
These are quite firm and chewy (and greasy ), but delicious and easy:1lb self-raising flour8oz caster sugar8oz marg/butter2 tbsp golden syrup2tsp ground ginger1 tsp bicarb of sodaMelt fat and syrup. Add to dry ingredients and mix well. Roll into walnut-sized balls. Bake on a greased tray at 180°C for 15 minutes.

you can experiment with the delia ones by varying the heat of your oven, size of ball and cooking time. Eventually you will end up with the perfect (to you) crisp to chew ratio and have made loads of yummy biscuits on the way.
