Anyone got a foolproof muffin recipe?

flossie64 gave me a recipe for courgette and carrot muffins, and they were amazing! However, i tried to follow this success with some Delia Smith ones, and they refused to rise, despite me making 2 batches and barely stirring at all!

Does anyone have any other muffin recipes? I'm thinking something like cranberry, or blueberry or lemon or something, not a big fan of chocolate muffins

Oh, and Misdee if you read this, I made the fridge cake you linked to - it lasted about 48 hours before DP and I scoffed the lot, and I made more than it said!!
