put them in a shallow dish and slap on a good glug of nice olive oil, squeeze on some lemon juice and grind on some black pepper, salt and oregano if you have it. Rub it in to them well and then leave at room temperature for half an hour.
Get some new potatoes and boil them in their jackets. Get your favourite creamy salad dressing ready Get some cherry tomatoes and slice in half Get some red onion and slice a quarter of it finely Get some salad leave ready
Heat the grill and leave it on for 5 minutes
Line the pan with foil and put the chops on it Grill for 4 minutes each side or until nice and brown on the outside. Let the chops rest, i.e. put them on a plate for 5 minutes
On the serving plate, arrange your salad leave and mix the tomatoes and onions through, put the new potatoes on the side, sprinkle with salt and dress with the dressing. Put the chops, at least 2 per person next to it and season with salt and pepper to taste.
