Chicken risotto - for guests - good recipe please?

I can bash together a risotto-ish veggie dish but want something a bit more special. Any ideas please?!

nigel slater's roast chicken risotto is delicious ic you can be bothered roasting before hand. i normally do it with left overs. if you like the sound i will type out recipe. it is v. simple

We lived on this in Italy last year and I have tried to make it and it does come out lovely. And it looks beautiful.

I have also made champagne and porcini (with a handful of the toadstool-looking mushrooms from Waitrose). Really nice too - but pour the fizz in slowly or it goes all over the place.

I have just realised, I use loads and loads of wine in my recipe, so maybe that's why I like risotto!

Well I know what I'm having tonight!!!
