Ideas, please, for veg dinner party menu for eight. No mushrooms!

I have 8 (or maybe 10) people coming for dinner on Sat. Three people are vegetarians, and I want to give everyone the same thing, so it has to be all veggie.

To complicate matters, one person doesn't like mushrooms. I don't want to make any kind of risotto or that Italian baked aubergine slice dish - I always do them for these guests. I need to expand my horizons, so I'd like your suggestions please.

Use a bit more cheese and thicker tomatoes than they say

Leave to cool to warmish before cutting

I have done for veggie and non veg mates they all love it

I did these as a veggie starter:

melting goats cheese tart thingies

Didn't bother making the chutney to go with them.

No idea on main courses though, sorry. I'm sure the good food website will be able to help smile

Is Pasta okay for this gang? If so, pasta with pesto (buy it from a deli or make it yourself if it's for friends). then mix it up with roasted baby tomatoes, avocado chunks and goats cheese. Truly delicious, looks good and colourful and very easy.

Although I like the delia recipe - I have a similar one but this looks good.

mexican is also a good choice if you like spicey food - lots of veggie mexican dishes

what about loads of dips and a falafel theme.

aubergine/tahini (can't remember what it's called)

grilled chicken (for meat people)

I did a thing for veggie friends made from upturned puff pastry, spread with pesto, which I put onto a load of veggies that I'd roasted (butternut squash, peppers, onions, courgettes etc) sprinkled with feta cheese and pine nuts. Baked for few mins to cook pastry, and then turned it out, bit like a tarte tartin.
Sprinkle with parsley and hey presto.
Everyone loved it.

how about stuffed roast peppers for starters?
I stuff them with Ainley Harriet flavoured couscous and then put some mozzarella on it and back under the grill...

for mains:
veggie Lasagne or Canelloni, maybe....

Thanks, everyone! That was quick.

These tart things seem to be a popular option for vegetarians, so I think I'll do some sort of tomato-pesto-goat's cheese tart for a starter, then maybe that moussaka that Annie linked to or blinklovin's pasta.

Nice idea about curry, Palava, but I've done them to death too.

And if you've done goats cheese and tomatoe for starter, you can change the goats cheese in the pasta for feta - less creamy, still delicious. Or just overload on goats cheese - but dpeends if your capacity for goats cheese is as weirdly high as mine.

i love tabbouleh . goes with a middle eastern vibe w/ houmous, grilled peppers, fat stuffed olives, slab of deli feta, flat bread, coriander, stuffed vine leaves etc.

goats cheese is not everyones thing aquired taste, imo....

if you do countessdrac's thing use vine tomatoes (still on the vine) looks v impressive, or halved cherry toms... you can do it using shavings of courgette as well, but can't remember where i saw that...
