quick & simple biscuit recipes?

anyone any ideas? so far i can do shortbread and some simple choc-chip types. just wondered if there's anything else anyone could think of to give a go?

Gingerbread I am making some today with the kids.
225g SR Flour
100g brown sugar
75g butter/marg
1 tsp ginger
2 tbsp golden syrup
1 egg

Mix flour, sugar & ginger together, then add butter. work with fingers into breadcrumbs. Beat the egg & add golden syrup, then add to mix. Mix together with a spoon, then knead into dough. (I put dough in fridge for about 30 mins, makes it easier to roll out)
Roll out.. cut into shapes then cook at 170 degrees for about 15 mins.

Or you could make raisin oat cookies.
125g butter/marge
75g brown sugar
100g SR flour
75g porridge oats
100g raisins
(add 1 tsp of cinnomon if you like it)

Cream butter & sugar. Add flour, oats & raisins.
Roll mix into balls the size of ping-pong balls.
Bake at 180degrees for 15 mins

anzac biscuits

4 oz plain flour
6 oz granulated sugar
3 oz dessicated coconut
3 oz rolled oats
3.5 oz butter
1 tbsp golden syrup
half tsp bicarbonate of soda
2 tbsp boiling water.

mix together the dry ingredients, then in a saucepan, melt together the butter and golden syrup. meanwhile pour the boiling water over the bicarb and stir well. When the butter is melted pour the bicar/water inin and stir together. Pour into the dry ingredients and mix well to make a dough. Roll into wallnut sized balls and place on a baking sheet. Bake at 180 degrees for 15 minutes.

thank you. will be shopping for ingredients this weekend, i like cooking in my new cooker so will try them all!!
