beetroot chocolate cake

Just made it - tis curiously yummy.
Any other recipes for the cunning insertion of vegetables into my toddler?

Already done carrot cake to death.

yy beetroot cocolate cake is good.

As is courgette cake - not unlike carrot cake, paler colour obv.

Can't find my handwritten recipe for courgette cake, I seem to remember it had sultanas and lots of yummy spices.

I'll have a think.

Have you done the tomato sauce trick with lots of veg?
Or if he/she likes finger food take them to a pick your own farm and see if that gets any interest...

Special Chocolate Cake

Covertly weigh 250g courgette and then grate coarsely (can peel first for extra subterfuge).

Grease tin - mine is a deep 8'' round one
Preheat oven to 180C.
Dissolve 50g cocoa in a bit of boiling water.
Beat 2 eggs
Sift 200g SR flour into bowl. Add ½ tsp baking powder, ½ tsp bicarbonate of soda, and 150g caster sugar.
Add 125ml veg oil (or soft butter), the courgette, the eggs, the cocoa.
Whisk. Or mix a lot.
Pour into tin
Bake for 45 min until firm to touch.
Leave to cool for 5 min, remove from tin, leave to cool completely.

i'm very intrigued by beetroot chocolate cake, do you taste the beetroot in it?? or the courgette in choc & courgette brownies?

Sounds like a bit of a bizzarre combination tbh n i dont struggle to get veggies into lo but can see it could be useful for future if ever she does turn her nose up at them

Comes out as a little sticky gooey rich chocolate cake. DS doesn't touch veg other than tomatoes; cucumber and sweetcorn.
Good thing about chocolate beetroot cake is once beetroot are cooked takes 5 mintues to make with a blender.
Like idea of courgettes in cakes.

DS is great with veg, but DH however doesn't eat much veg apart from peas, carrots and potatoes - fussy bugger - maybe i should try these recipes on him! They sound delicious - I love carrot cake and the beetroot choc sounds scrummy!

Best recipe for beetroot chocolate cake is :

100g dark chocolate chopped up
250g fresh cooked beetroot - not the stuf in vinegar
3 eggs
125g SR flour
25 g cocoa powder
8 1/2 Floz corn oil
150g brown sugar

blend beetroot in blender add everything else in the blender then cook at about 190

cece your courgette one sounds similar to the beetroot one but probably different texture .thanks
