Can you make a white suce with olive oil?

I normally use butter/flour to make a roux then add milk

But can you do it with olive oil?

Yes and I find it easier than using butter. Ends up less lumpy for me

Hmm - DD & I may experiment

She is learning to do a roux, but DH is on a low cholesterol diet so if we can do it with Olive Oil that would be good

Quiche is next week-ends learning experiment

Yes, better with cheap Olive Oil rather than the good stuff with a strong taste, unless you want your white sauce to be overwhemingly olivey

No idea

But I think pastry making is an important pat of a cooks repertoire but I am worrying about teaching her puff & rough puff (primarily because I'm not sure I can remember)

She can already do choux pastry - so shortcrust is next
