Make a spinach lasagne. Either tomato type sauce with the spinach, tin of tomatoes, maybe a courgete, garlic, oregano etc., or spinach with ricotta or goats cheese, pine nuts etc. Layer with cheese sauce and green lasagne sheets, grate parmesan on top, yum yum.
Or spanokopita - cook with some chopped onion, garlic, ricotta, crumbled feta, oregano, beaten egg and flour to bind, in filo pastry parcels or filo pastry pie.
