Roasted Sweet Potato - How? And How Long?

Sorry, total novice. Peel it, chop it into chunks, drizzle oil over it, put in oven? How long for? Anything else?

yummy sweet potato - about 30 mins drizzled in olive oil - we don;t eat white pots anymore - these are great with roast beetroot, parsnip and carrot with orast beef [yummy]

Or you can bake it like you would a jacket potato. Takes a bit less time and goes sooooo soft and yummy in the middle.

any herbs you can throw in with it, thyme or parsley over after wards?
