4oz plain flour, half pint milk, 1 egg, pinch of salt, can multiply the ingredients depending on how hungry you are feeling! I had six yesterday...

Butter for frying,

slurp, I love pancakes with lemon and sugar and one particularly skint day we had them for tea, about six each!!

The first one is always too thick and after that I get the hang of it and make loads!

I use 4 oz plain flour, pinch of salt. Make a well and crack one egg in. Then use half pint of milk and water, adding it slowly and whisking a lot to get rid of any lumps.

I use sunflower oil in the pan - put some in a cup and pour it in and then tip back into cup so there is a little bit in the pan. Make sure it is nice and hot before putting the batter in .

Sieve the flour, ideally.
