Need new ideas with sausages

I'm bored of my usual sausage recipes - a creamy pasta sauce one which is very indulgent and a tomato/fennel one which is a bit healthier. Any ideas for a one pot sausage dish? Needs to be reheatable (hence not just doing plain bangers and mash) as DH may not be in to enjoy it tonight so will save it for tomorrow. I have some peppery pork sausages and some plain ones. Ta!

Fry some cubed bacon

Add a small chopped onion, fry for a few mins

Add a clove of sliced garlic and some chopped mushrooms, fry for another 5 mins (covered)

Add about 4oz of green or brown lentils to the pan and cover with about a pint of boiling water, over a moderate heat

Meanwhile get some sausages grilling/frying

Lentil mixture takes about 25mins. With 5 to go, turn up the heat to evaporate most of the liquid (but keep moist)

Slice the sausages and add to the mixture and serve (stir in some chopped parsley too)

Yum - thank Nigel Slater

I like to split open the raw sasuages and roll the sausagemeat into balls and have it with pasta, or like above with a lentil/beany stew thing

We have sausages roasted with mediteranean veg - we stick everything in one oven tray and then roast for as long as it takes then about 10 minutes before everything cooked I drizzle over honey and it is yummy!

2 tablespoons of honey
1 tablespoon of grainy mustard
Mix in a mug
Fill the rest of the mug up with boiling water and mix again.

Pour over the sausages and spoon over them to coat them.

Cook in the oven, turning the sausages over every 15 minutes or so.

When cooked, remove the sausages from the left over mixture and stir in a couple of spoonfuls of creme fraiche to make a sauce.

Serve with mash or baked potatoes and veg.

DEEEEEEELICIOUS

(But a hellish roasting dish to clean!)

Nigel Slater's sausages...

Fry one roughly chopped onion till soft, add 2 cloves sliced garlic. Add chopped salami and stir for a few mins. Add washed green lentils. Add carton of passata then fill carton with water and chuck that in. Bring to boil. Add sausages that have been grilled for a few mins to get some colour and a bay leaf. Simmer for about 45 mins.

Will sit happily for day or so, freezes and defrosts well.
