Desperately looking for peppermint squares recipe..........

its for my Dp for Valentines he loved it as a child. I've lost my recipe. Please help??????

Is it likethis ? Cbeebies had a version before Xmas where you could use water instead of egg white but no longer on the site .

I think I know what you mean....like a tray bake with a chocolate cheesecake base, mint filling and then chocolate on top....version of millionaires shortbread...

Loved it as a child and saw it being sold somewhere recently as home baking. You could make a chocolate biscuit base with choc digestives and butter and then use the peppermint cream recipe on top and then dark chocolate on top of that.

There are biscuits in the shops...wrapped in green foil(Arnotts I think)...which are very similar...if unwrapped they could be made it to a shape or added on top of another cake.

Thanks for all your suggestions. Yes Like a tray bake I can make the shortbread base its just the peppermint creamy filling?

Traditional Scottish Recipes

  • Peppermint Slice

    If you like peppermint, you will like this delicious confection.



    Ingredients:
    4 ounces (125g or one stick in the US) margarine
    4 ounces (125g or one cup) self raising flour (All-purpose flour with baking powder)
    3 ounces (75g or ½ cup) soft brown sugar
    2½ ounces (60g or one third cup) crushed cornflakes
    1 ounce (25g or one rounded table spoon) cocoa powder
    1 pound (500g or 2½ cups) icing sugar (frosting)
    2 teaspoons peppermint essence (extract)
    5 tablespoons water
    A few drops of green colouring (optional)
    4 ounces (125g or one stick) chocolate (more if you like thicker chocolate!)

    Method:
    Preheat the oven to 325F/170C/Gas Mark 3 (less if a fan assisted oven). Melt the margarine in a non-stick pan and stir in the sugar, crushed cornflakes, cocoa and flour. Line a 9" (23 cm) square tin with baking parchment and spread the mixture into this. Bake in the pre-heated oven for 20 minutes.

    Remove from the oven and allow to cool in the tin.

    Mix the icing sugar (frosting), peppermint essence (extract) and optional colouring with water to create a thick paste and spread over the base. Allow this to set (preferably overnight).

    Finally, spread with melted chocolate and allow to set. Cut into squares.

OMG, you lot keep setting off fresh pg cravings for me!!! Can't face cooking but I HAVE to have some of this!

My mum's out shopping - I wonder if a bar of Fry's Peppermint would do the trick ......???

Cadbury, you are a sweetheart - thanks for posting that off - took a load off my list of things to do today and meant I didn't need to go anywhere near town.
Haven't made them yet as got distracted, but Cadders - would they be there when I get back??? - can't wait to try these - choccy heaven. Did I tell you about the flapjacks I made yesterday - used honey nut bran flakes and have renamed this batch crapjacks!! They taste fab, but they stuck horribly to the tin. Naturally I salvaged what I could!

Am on holiday at parentshouse in N Irelandatm, but will look it out for you on my return franch. Just remind me on here if I forget. Won't be home again though until 21st Feb!

Aero! Am shocked that you are still mumsnetting whilst with your dps. Hope your journey was ok - nasty winds over the Irish sea I heard. Was thinking of you this morning whilst stopping dd going to church over continuous bad behaviour. My neighbours must know I'm a hearltless b*tch of a mother now. They will have heard her screaming " But I want to go to childrens church mummy!". Having the weekend from hell here. Hope yours is much better than that. Kiss the kids and say hi to your folks for me. Dx

Well,it was the peppermint slice thread!!!Actually, made it yesterday and it was a bit of a flop tbh. Icing too thin, so will re-attempt when less hassled!!
Sorry you're having a`rough day - our journey was pretty bumpy too to say the least.
Must go now b4 get accused of being anti-social!!
